2 cups dried black beans (or 3 cans of black beans, drained and rinsed)

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, diced

1 bell pepper (red or green), diced

2 stalks of celery, diced

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust to taste)

1 teaspoon chili powder

6 cups vegetable broth

1 can (14 oz) diced tomatoes (with juices)

2 tablespoons olive oil

Juice of 1 lime

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Avocado slices (for garnish)

Sour cream or yogurt (optional, for serving)

Instructions
 

Prepare the Black Beans: If using dried black beans, soak them overnight in water. Drain and rinse before using them in the soup. If using canned beans, simply drain and rinse them.

    Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, bell pepper, and celery. Sauté for about 5-7 minutes until the vegetables are softened and the onion becomes translucent.

      Add Garlic and Spices: Stir in the minced garlic, cumin, smoked paprika, cayenne pepper, and chili powder. Sauté for an additional 1-2 minutes until fragrant.

        Combine the Ingredients: Add the soaked (or canned) black beans, diced tomatoes (including juices), and vegetable broth to the pot. Stir well to combine.

          Simmer: Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for 30-40 minutes (if using dried beans) or 20 minutes (if using canned beans). Stir occasionally, and check for doneness, ensuring the beans are tender.

            Blend for Texture: Use an immersion blender to blend some of the soup directly in the pot until creamy, while leaving some beans whole for texture. Alternatively, you can transfer about half of the soup to a blender, blend until smooth, and return it to the pot.

              Season and Finish: Taste the soup and adjust with lime juice, salt, and pepper. Let the soup simmer for an additional 5 minutes.

                Serve: Ladle the soup into bowls and garnish with fresh cilantro, avocado slices, and a dollop of sour cream or yogurt if desired.
