Spicy Baked Chicken Lettuce Wraps

1 lb ground chicken

1 tablespoon olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons soy sauce

2 tablespoons sriracha sauce (adjust to taste)

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 red bell pepper, finely diced

1 carrot, grated

1/4 cup fresh cilantro, chopped

Salt and pepper to taste

1 head of butter lettuce or romaine lettuce leaves, separated for wraps

Optional toppings: chopped peanuts, extra cilantro, lime wedges

Instructions
 

Preheat the oven to 375°F (190°C).

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

      Add the minced garlic and grated ginger. Sauté for another 1-2 minutes until fragrant.

        Add the ground chicken to the skillet, breaking it apart with a spatula. Cook for about 5-7 minutes, or until the chicken is browned and cooked through.

          While the chicken is cooking, mix the sauce: In a small bowl, whisk together the soy sauce, sriracha, rice vinegar, and sesame oil.

            Once the chicken is cooked, pour the sauce over the chicken mixture, stirring well to combine. Add the diced red bell pepper and grated carrot, cooking for an additional 2-3 minutes until the veggies are tender but still crisp.

              Season with salt and pepper to taste. Remove from heat and stir in the chopped cilantro.

                Transfer the chicken mixture to a baking dish and spread evenly. Bake in the preheated oven for about 15 minutes to let the flavors meld.

                  To serve, spoon the spicy chicken mixture into the prepared lettuce leaves, and top with optional peanuts, extra cilantro, and lime wedges if desired.
