1 cup rolled oats

1 cup unsweetened almond milk (or milk of choice)

1/2 cup pure pumpkin puree

2 tablespoons maple syrup (adjust to taste)

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon vanilla extract

Pinch of salt

1/4 cup Greek yogurt (or dairy-free yogurt)

Toppings: chopped pecans, coconut flakes, additional pumpkin puree, and a sprinkle of cinnamon

Instructions
 

In a medium bowl, combine the rolled oats, almond milk, pumpkin puree, maple syrup, cinnamon, nutmeg, ginger, vanilla extract, and salt. Stir well until all ingredients are fully mixed and the oats are coated evenly.

    Transfer the mixture to two individual jars or containers with lids, or one larger container. Make sure to leave some space at the top since the oats will expand as they soak up the liquid.

      Cover the jars or container with a lid and refrigerate overnight (or for at least 4 hours) to allow the oats to soak and soften.

        When ready to serve, take the oats out of the refrigerator and give them a good stir. If the mixture seems too thick, you can add a splash of almond milk to loosen it.
