1 lb ground chicken

1 cup black beans, rinsed and drained

1 cup corn, frozen or fresh

1 red bell pepper, diced

1 small onion, finely chopped

2 cloves garlic, minced

2 teaspoons ground cumin

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust to taste)

Salt and pepper, to taste

½ cup fresh cilantro, chopped

Juice of 1 lime

1 tablespoon olive oil

8-10 large romaine lettuce leaves (or butter lettuce)

Optional toppings: diced avocado, salsa, shredded cheese, sour cream

Instructions
 

Prepare the Chicken Mixture: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and diced red bell pepper. Sauté for about 3-4 minutes until softened.

    Add Garlic and Spices: Stir in the minced garlic, ground cumin, smoked paprika, cayenne pepper, and season with salt and pepper. Cook for an additional minute until fragrant.

      Cook the Chicken: Increase the heat to medium-high and add the ground chicken to the skillet. Cook, breaking it apart with a spatula, until the chicken is cooked through and no longer pink—about 5-7 minutes.

        Combine Remaining Ingredients: Stir in the black beans, corn, and lime juice. Cook for another 2-3 minutes until everything is heated through and well combined. Adjust seasoning to taste. If desired, mix in chopped cilantro at this stage for an added fresh flavor.
