1 ½ cups all-purpose flour

1 tsp baking soda

½ tsp cream of tartar

½ tsp salt

½ cup unsalted butter, softened

1 cup granulated sugar

1 large egg

1 tsp vanilla extract

¼ cup light brown sugar, packed

2 tbsp granulated sugar (for topping)

1 tsp ground cinnamon (for topping)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease and line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, cream of tartar, and salt. Set aside.

      Cream Butter and Sugars: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar with an electric mixer on medium speed until the mixture is light and fluffy, about 2-3 minutes.

        Add Egg and Vanilla: Beat in the egg and vanilla extract until well combined.

          Combine Mixtures: Gradually add the dry ingredient mixture into the wet mixture, mixing on low speed until just combined. Be careful not to overmix.

            Spread the Batter: Pour the snickerdoodle batter into the prepared baking dish, smoothing the top evenly.

              Prepare Topping: In a small bowl, mix the 2 tablespoons of granulated sugar with the 1 teaspoon of ground cinnamon. Sprinkle this mixture evenly over the batter.
