Smoky BBQ Chickpea and Coleslaw Wraps

1 can (15 oz) chickpeas, rinsed and drained

2 tablespoons olive oil

2 tablespoons smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon cayenne pepper (adjust to taste)

½ cup BBQ sauce (your favorite brand)

4 large whole wheat tortillas or wraps

2 cups shredded green cabbage

1 cup shredded carrots

½ cup mayonnaise or vegan mayo

2 tablespoons apple cider vinegar

1 tablespoon honey or maple syrup (for vegan option)

Salt and pepper to taste

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Prepare the Chickpeas: In a large skillet, heat the olive oil over medium heat. Add the rinsed and drained chickpeas, and sprinkle with smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper.

    Sauté: Cook the chickpeas for about 5-7 minutes, stirring occasionally, until they're slightly crispy and heated through.

      Add BBQ Sauce: Pour in the BBQ sauce, stirring well to coat the chickpeas. Let them cook for another 3-5 minutes until heated and the sauce has thickened slightly. Remove from heat.

        Make the Coleslaw: In a large bowl, combine the shredded cabbage and carrots. In a separate small bowl, mix together the mayonnaise, apple cider vinegar, honey (or maple syrup), and a pinch of salt and pepper. Pour this dressing over the cabbage mixture and toss until everything is evenly coated.
