Smashed Brussels Sprouts with Garlic

1 pound Brussels sprouts, trimmed and halved

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes (optional for heat)

Salt and pepper to taste

½ cup grated Parmesan cheese

2 tablespoons fresh lemon juice

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Boil the Brussels Sprouts: In a large pot, bring salted water to a boil. Add the halved Brussels sprouts and cook for about 8-10 minutes, or until fork-tender. Drain and allow to cool slightly.

      Smash the Brussels Sprouts: On a large baking sheet lined with parchment paper, place the cooked Brussels sprouts cut side up. Use a potato masher or the bottom of a glass to gently smash each sprout until flattened but still intact.

        Season the Sprouts: Drizzle the smashed Brussels sprouts with olive oil and season with salt, pepper, and red pepper flakes if desired. Make sure they’re evenly coated.

          Roast the Brussels Sprouts: Roast in the preheated oven for 20-25 minutes, or until the edges are crispy and golden brown.

            Prepare the Garlic Topping: While the Brussels sprouts are roasting, heat a small skillet over medium heat. Add a tablespoon of olive oil and sauté the minced garlic for about 2-3 minutes, just until fragrant. Be careful not to burn it.

              Add the Parmesan: Once the Brussels sprouts are done roasting, remove them from the oven and immediately sprinkle the sautéed garlic evenly over them. Follow with the grated Parmesan cheese, allowing it to melt into the hot sprouts.

                Finish with Lemon Juice and Parsley: Drizzle the fresh lemon juice over the top and garnish with chopped parsley before serving.
