1 lb (450g) boneless, skinless chicken breasts or thighs

1 medium onion, chopped

4 cloves garlic, minced

2 cans (15 oz each) white beans (cannellini or great northern), drained and rinsed

1 can (4 oz) diced green chiles

1 cup corn (fresh or frozen)

1 cup low-sodium chicken broth

1 teaspoon ground cumin

1 teaspoon chili powder

½ teaspoon smoked paprika

½ teaspoon salt (adjust to taste)

½ teaspoon black pepper

Juice of 1 lime

½ cup sour cream or Greek yogurt (for creaminess)

½ cup chopped fresh cilantro, plus extra for garnish

Optional toppings: diced avocado, shredded cheese, sliced jalapeños, additional lime wedges

Instructions
 

Prepare the Chicken: Place the chicken breasts or thighs at the bottom of the slow cooker.

    Add Aromatics: Add the chopped onion, minced garlic, drained white beans, diced green chiles, and corn on top of the chicken.

      Season the Chili: Pour in the chicken broth and sprinkle the cumin, chili powder, smoked paprika, salt, and black pepper over the mixture. Stir gently to combine the ingredients while keeping the chicken at the bottom.

        Cook: Cover the slow cooker with the lid and set it to cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
