Ingredients

1 pound elbow macaroni

4 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 cup crumbled cooked bacon (about 8 slices)

4 cups chicken or vegetable broth

1 cup heavy cream

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1 teaspoon salt

1/2 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions

Cook the Bacon: Start by cooking the bacon until crispy. Once done, set it aside on paper towels to drain excess oil and then crumble it into bite-sized pieces.

Prepare the Slow Cooker: Spray the inside of your slow cooker with cooking spray or lightly grease it. This will help with easy cleanup.

Combine Ingredients: In the slow cooker, add the dry elbow macaroni, cooked bacon, shredded cheddar cheese, mozzarella cheese, chicken or vegetable broth, heavy cream, Dijon mustard, garlic powder, onion powder, smoked paprika, black pepper, and salt. Stir well to ensure everything is evenly combined.

Cook: Cover the slow cooker and set it on low heat for about 2-3 hours, stirring occasionally. The macaroni should be tender and the cheese melted and creamy by the end of the cooking time.

Finish with Parmesan: Once cooked, stir in the grated Parmesan cheese for an extra layer of flavor. Adjust seasoning to taste if necessary.

Garnish and Serve: Serve the mac and cheese hot, garnished with chopped fresh parsley for a pop of color. Savour the rich, creamy flavors with crunchy bits of bacon in every bite!
