Slow Cooker French Onion Beef & Noodles

2 pounds beef chuck roast

4 large onions, thinly sliced

4 cloves garlic, minced

2 cups beef broth

1 cup dry white wine (or additional beef broth)

2 tablespoons Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper, to taste

12 ounces egg noodles

1 cup shredded Gruyère cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Onions: In a large skillet over medium heat, add a tablespoon of oil and sauté the sliced onions until they are soft and caramelized, about 20-25 minutes. Stir frequently to prevent burning. Once done, transfer them to the slow cooker.

    Sear the Beef: Season the beef chuck roast generously with salt and pepper. In the same skillet, add a little more oil and sear the roast on all sides until browned, about 4-5 minutes per side. Transfer the beef to the slow cooker on top of the onions.

      Combine the Broth Mixture: In a bowl, mix together the beef broth, dry white wine, Worcestershire sauce, minced garlic, thyme, and rosemary. Pour this mixture over the beef and onions in the slow cooker.

        Slow Cook: Cover the slow cooker and cook on low for 8 hours or on high for about 5 hours, until the beef is tender and can be easily shredded with a fork.

          Prepare the Noodles: About 30 minutes before serving, cook the egg noodles according to package instructions. Drain and set aside.

            Shred the Beef: Once the cooking time is complete, remove the roast from the slow cooker, shred the beef with two forks, and return it to the pot, mixing it well with the onions and juices.

              Combine: Fold the cooked egg noodles into the slow cooker, ensuring they are evenly coated with the sauce.

                Add the Cheese: Sprinkle the shredded Gruyère cheese over the top of the beef and noodle mixture. Cover and let it sit for about 10 minutes or until the cheese is melted and bubbly.
