Skillet Sausage & Red Potato Hash

1 lb (450g) spicy Italian sausage, casings removed

1 lb (450g) red potatoes, diced into 1-inch cubes

1 medium onion, finely chopped

1 red bell pepper, diced

2 cloves garlic, minced

1 tsp smoked paprika

1/2 tsp dried oregano

Salt and pepper to taste

2 tbsp olive oil

4 large eggs (optional)

Fresh parsley, chopped for garnish

Instructions
 

Boil the Potatoes: Place the diced red potatoes in a pot, cover with water, and bring to a boil. Cook for about 10 minutes until just tender. Drain and set aside.

    Cook the Sausage: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sausage and cook, breaking it up with a spoon, for about 5-7 minutes until browned and cooked through. Remove the sausage from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion, diced red bell pepper, and minced garlic. Sauté for 4-5 minutes until the onions are translucent.

        Combine Ingredients: Add the boiled potatoes to the skillet and sprinkle in the smoked paprika, oregano, salt, and pepper. Stir everything together and cook for another 5-7 minutes, allowing the potatoes to get crispy and golden.

          Add Sausage: Return the cooked sausage to the skillet and mix well with the hash. Cook for an additional 2-3 minutes to heat through.

            Optional Eggs: For added richness, create 4 small wells in the mixture and crack an egg into each well. Cover the skillet and cook on low heat for about 4-5 minutes, or until the eggs are set to your liking.

              Garnish & Serve: Remove from heat. Garnish with freshly chopped parsley. Enjoy hot, straight from the skillet!
