4 boneless, skinless chicken breasts

Salt and pepper to taste

2 tablespoons olive oil

4 cloves garlic, minced

Zest of 1 lemon

Juice of 2 lemons

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon fresh rosemary, finely chopped (or 1/3 teaspoon dried)

1 cup chicken broth

2 tablespoons unsalted butter

Fresh parsley, chopped (for garnish)

Lemon slices (for garnish)

Instructions
 

Prepare the Chicken: Pat the chicken breasts dry with paper towels and season both sides with salt and pepper.

    Sear the Chicken: In a large skillet over medium-high heat, add 2 tablespoons of olive oil. Once hot, add the chicken breasts in a single layer. Cook for about 5-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F/74°C). Remove chicken from the skillet and keep warm.

      Make the Garlic Lemon Sauce: Lower the heat to medium. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it. Add the lemon zest, lemon juice, dried oregano, dried thyme, and rosemary. Stir well to combine.

        Deglaze & Add Broth: Pour in the chicken broth, scraping the bottom of the skillet to deglaze and incorporate all the browned bits. Bring to a simmer and let it reduce slightly, for about 3-5 minutes.

          Finish Sauce with Butter: Reduce the heat to low. Add 2 tablespoons of butter to the sauce and stir until melted and emulsified, creating a silky texture.

            Return Chicken to Skillet: Add the cooked chicken back into the skillet, spooning some of the sauce over each piece. Let it warm through for an additional 2-3 minutes, allowing the flavors to meld.

              Serve: Garnish with chopped fresh parsley and lemon slices. Serve hot with rice, quinoa, or a fresh salad to soak up the delicious lemon garlic herb sauce.
