1 cup fig jam (store-bought or homemade)

4 large flour tortillas

1 cup shredded mozzarella cheese (or brie for a creamier option)

½ cup goat cheese, crumbled

2 tablespoons unsalted butter

1 teaspoon fresh thyme leaves (optional)

Fresh arugula or basil leaves for garnish (optional)

Prepare Your Ingredients: Gather all ingredients on a clean workspace. If you're using fresh thyme, remove the leaves from the stems and set aside.

    Spread the Fig Jam: Place a tortilla on a clean surface. Spread approximately ¼ cup of fig jam evenly over half of the tortilla.

      Add Cheeses: Sprinkle ¼ cup of shredded mozzarella cheese and 2 tablespoons of crumbled goat cheese over the fig jam. If you're using thyme, add a few leaves at this stage for added flavor.

        Fold the Tortilla: Carefully fold the tortilla in half, pressing down gently to secure the filling.

          Heat the Pan: In a large skillet, melt 1 tablespoon of unsalted butter over medium heat. Once melted and slightly bubbled, carefully place the folded tortilla in the skillet.

            Cook Until Golden: Cook the quesadilla for about 3-4 minutes, or until the bottom is golden brown and the cheese begins to melt.

              Flip and Repeat: Using a spatula, carefully flip the quesadilla and add the remaining butter to the skillet. Cook the second side for another 3-4 minutes, until golden and crispy.

                Slice and Serve: Once both sides are golden and the cheese is melted, remove the quesadilla from the skillet. Let it cool for a minute, then slice it into wedges.
