4 medium russet potatoes

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon paprika

Fresh parsley, chopped (for garnish)

Prepare the Potatoes: Wash and scrub the russet potatoes thoroughly. Cut each potato into wedges (about 8 wedges per potato), keeping the skin on for added flavor and texture.

    Soak the Wedges: Place the potato wedges in a large bowl of cold water and let them soak for at least 30 minutes. This step helps to remove excess starch and will make the wedges crispier.

      Season the Wedges: After soaking, drain the wedges and pat them dry with a clean kitchen towel. In a large mixing bowl, combine the olive oil, minced garlic, dried oregano, dried thyme, paprika, salt, and black pepper.
