2 cups fresh blueberries, plus extra for garnish

2 tablespoons granulated sugar (divided)

1 tablespoon lemon juice

Zest of 1 lemon

1 cup heavy cream

1/2 cup mascarpone cheese or Greek yogurt

1 teaspoon vanilla extract

A pinch of salt

Prepare the Blueberries: In a saucepan over medium heat, combine the fresh blueberries, 1 tablespoon of sugar, lemon juice, and half of the lemon zest. Cook for about 5-7 minutes, stirring occasionally, until the blueberries have burst and a thick sauce forms. Remove from heat and let it cool completely.

    Whip the Cream: In a mixing bowl, add the heavy cream, the remaining tablespoon of sugar, vanilla extract, and a pinch of salt. Using an electric mixer, whip the cream on medium-high speed until soft peaks form. Be careful not to over-whip.

      Combine Mascarpone: In a separate bowl, whisk the mascarpone cheese (or Greek yogurt) until smooth. Gently fold the whipped cream into the mascarpone in two to three additions, being careful not to deflate the mixture.

        Layer the Fool: In serving glasses or bowls, add a layer of the blueberry sauce at the bottom. Then, layer the whipped cream mascarpone mixture on top. Repeat the layers as needed, finishing with a dollop of the blueberry sauce on top.

          Garnish & Chill: Top each glass with a few fresh blueberries and a sprinkle of the remaining lemon zest for garnish. Cover with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.

            Serve: Remove from the refrigerator and serve chilled. Enjoy the refreshing contrast of the sweet blueberries with the light, creamy lemon mixture!
