Ingredients

2 cups heavy cream

1 cup whole milk

1/2 cup granulated sugar

2 tablespoons Earl Grey tea leaves (or 4 tea bags)

2 1/2 teaspoons unflavored gelatin powder

1 teaspoon vanilla extract

A pinch of salt

Fresh berries (for garnish)

Edible flowers (for garnish, optional)

Instructions

Bloom the Gelatin: In a small bowl, sprinkle the gelatin over 3 tablespoons of cold water. Let it stand for about 5-10 minutes until it becomes gelatinous.

Infuse the Cream: In a medium saucepan, combine heavy cream, whole milk, and sugar. Add the Earl Grey tea leaves (or tea bags) to the mixture. Heat over medium heat until it just starts to simmer. Remove from heat and allow it to steep for 10-15 minutes for a rich flavor.

Dissolve Gelatin: Strain the cream mixture through a fine mesh sieve into a clean saucepan to remove the tea leaves. Reheat the strained mixture over low heat and stir in the bloomed gelatin until it is completely dissolved. Add the vanilla extract and a pinch of salt, mixing thoroughly.

Fill Molds: Pour the mixture evenly into individual ramekins or serving glasses. Allow them to cool to room temperature before covering with plastic wrap.

Chill: Place the filled containers in the refrigerator. Chill for at least 4 hours or until set completely (overnight is preferred for best results).

Serve: To serve, carefully run a knife around the edges to loosen the panna cotta if using molds. Invert onto a plate or simply serve in the glasses. Top with fresh berries and edible flowers for a pretty touch.

Enjoy: Savor this velvety dessert that perfectly balances the aromatic flavors of Earl Grey!
