1 lb (450g) ground turkey

2 cups broccoli florets

1 medium red bell pepper, sliced

1 medium carrot, julienned

1 cup snap peas, trimmed

3 cloves garlic, minced

1-inch piece of ginger, grated

3 tablespoons soy sauce (low-sodium)

1 tablespoon hoisin sauce

2 teaspoons sesame oil

1 tablespoon vegetable oil

1 tablespoon rice vinegar

1 tablespoon cornstarch mixed with 2 tablespoons cold water (for thickening)

Salt and pepper to taste

Cooked brown rice or quinoa for serving

Sesame seeds and chopped green onions for garnish

Instructions
 

Prepare the sauce: In a small bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, and sesame oil. Set aside.

    Cook the turkey: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the ground turkey and season with a little salt and pepper. Cook for about 5-7 minutes, breaking it apart with a spatula until browned and cooked through.

      Add vegetables: Stir in the garlic and ginger, cooking for about 1 minute until fragrant. Then add the broccoli, red bell pepper, carrot, and snap peas. Stir-fry the vegetables with the turkey for about 5-6 minutes, or until they are just tender but still crisp.

        Thicken the sauce: Pour in the prepared sauce, mixing well to coat all the ingredients. Bring the mixture to a gentle simmer, then stir in the cornstarch mixture. Cook for an additional 2-3 minutes until the sauce thickens and nicely glazes the turkey and vegetables.

          Serve: Taste and adjust seasoning if necessary. Serve the stir-fry over a bed of cooked brown rice or quinoa. Garnish with sesame seeds and chopped green onions for extra flavor.
