Ingredients

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 onion, finely chopped

2 cloves garlic, minced

1 cup fresh spinach, chopped

1 cup low-sodium chicken broth

1 teaspoon dried thyme

1 teaspoon dried oregano

½ teaspoon paprika

½ teaspoon salt (to taste)

¼ teaspoon black pepper (to taste)

1 cup shredded cheddar cheese

¼ cup plain Greek yogurt

1 tablespoon olive oil

½ cup breadcrumbs (optional for crunch)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Sweet Potatoes: In a medium saucepan, bring water to a boil. Add the diced sweet potatoes and cook for about 10-15 minutes, or until they are tender. Drain and set aside.

Cook the Turkey: In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent, about 4-5 minutes.

Add Ground Turkey: Increase the heat slightly and add the ground turkey to the skillet. Cook until browned, breaking it apart with a spatula, about 7-10 minutes.

Season the Mixture: Stir in the dried thyme, oregano, paprika, salt, and black pepper. Pour in the chicken broth and bring the mixture to a simmer. Cook for an additional 5 minutes to let the flavors meld together.

Combine Ingredients: In a large mixing bowl, combine the cooked sweet potatoes, sautéed turkey mixture, chopped spinach, and Greek yogurt. Mix well until fully incorporated.

Prepare to Bake: Transfer the turkey and sweet potato mixture into a greased 9x13 inch baking dish. If you like a crunchy topping, sprinkle the breadcrumbs evenly over the top and finish with a layer of shredded cheddar cheese.

Bake the Casserole: Place the casserole in the preheated oven and bake for 25-30 minutes or until the cheese is bubbly and golden brown.

Let it Rest: Once baked, allow the casserole to rest for about 5 minutes before serving, enabling the flavors to settle.

Serve and Enjoy: Scoop out portions of the savory turkey and sweet potato casserole onto plates, and enjoy this comforting dish warm!
