Ingredients
  

20 large pasta shells

1 pound ground turkey

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 egg, beaten

2 cloves garlic, minced

1/2 medium onion, finely chopped

1 teaspoon Italian seasoning

Salt and pepper, to taste

2 cups marinara sauce

Fresh basil leaves, for garnish (optional)

Instructions
 

Cook the Pasta Shells:

    - Bring a large pot of salted water to a boil. Cook the pasta shells according to package instructions until al dente. Drain and set aside to cool.

      Prepare the Filling:

        - In a large skillet over medium heat, add a drizzle of olive oil and sauté onions until translucent, about 3-4 minutes. Add minced garlic and cook for an additional 1 minute until fragrant.

          - Add the ground turkey to the skillet, breaking it apart with a wooden spoon. Cook until browned and no longer pink, approximately 5-7 minutes. Season with salt, pepper, and Italian seasoning.

            - Once cooked, stir in the chopped spinach and cook until wilted, around 2 minutes.

              - In a mixing bowl, combine the cooked turkey mixture with ricotta cheese, half of the mozzarella cheese, Parmesan cheese, and the beaten egg. Mix well until fully combined.

                Stuff the Shells:

                  - Preheat your oven to 375°F (190°C).

                    - Spread 1 cup of marinara sauce evenly across the bottom of a large baking dish.

                      - Using a spoon, fill each cooked pasta shell with the turkey and spinach mixture and place them in the baking dish seam side up.

                        - Once all shells are stuffed, pour the remaining marinara sauce over the top and sprinkle with the remaining mozzarella cheese.

                          Bake:

                            - Cover the dish with aluminum foil and bake for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes or until the cheese is melted and bubbly.

                              Garnish and Serve:

                                - Remove from the oven and let it cool for a few minutes. If desired, garnish with fresh basil leaves before serving.
