4 boneless, skinless chicken breasts

1 cup fresh spinach, chopped

1 cup feta cheese, crumbled

1/2 cup cream cheese, softened

2 cloves garlic, minced

1/2 teaspoon onion powder

1/2 teaspoon dried oregano

1/4 teaspoon black pepper

1 tablespoon olive oil

Salt, to taste

Toothpicks or kitchen twine (for securing)

Instructions
 

Prepare the Filling:

    - In a mixing bowl, combine the chopped spinach, crumbled feta cheese, softened cream cheese, minced garlic, onion powder, dried oregano, black pepper, and a pinch of salt. Mix well until all ingredients are thoroughly combined.

      Prepare the Chicken:

        - Preheat your oven to 375°F (190°C).

          - Carefully slice each chicken breast horizontally, creating a pocket for the stuffing. Be careful not to cut all the way through.

            - Season the outside of the chicken breasts with salt and pepper.

              Stuff the Chicken:

                - Generously fill each chicken breast pocket with the spinach and feta mixture. You can use about 1/4 cup of filling per breast, or more if there's room.

                  - Secure the openings of the stuffed chicken breasts with toothpicks or tie them with kitchen twine to keep the filling from leaking out during cooking.

                    Sear the Chicken:

                      - In a large, oven-safe skillet, heat the olive oil over medium-high heat.

                        - Once hot, carefully place the stuffed chicken breasts in the skillet. Sear for about 4-5 minutes on each side until they are golden brown.

                          Bake the Chicken:

                            - Once seared, transfer the skillet to the preheated oven. Bake for an additional 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 74°C).

                              Serve:

                                - Remove the chicken from the oven, and let it rest for about 5 minutes. Carefully remove the toothpicks or twine.

                                  - Slice the stuffed chicken and serve warm, garnished with fresh herbs or a side salad for a complete meal.
