1 lb large shrimp, peeled and deveined

2 cups broccoli florets

1 bell pepper, sliced (any color)

1 medium carrot, julienned

1 cup sugar snap peas

3 cloves garlic, minced

2 tablespoons fresh ginger, minced

3 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 tablespoon sesame oil

2 tablespoons vegetable oil (for stir-frying)

1 teaspoon cornstarch (optional, for thickening)

1/4 cup water or chicken broth

1 tablespoon sesame seeds (for garnish)

Cooked rice or quinoa (for serving)

Chopped green onions (for garnish)

Instructions
 

Prepare the Shrimp: In a bowl, mix the shrimp with 1 tablespoon of soy sauce and let it marinate for about 10 minutes.

    Prepare the Vegetables: While the shrimp is marinating, wash and cut all your vegetables as described in the ingredients section.

      Make the Stir-Fry Sauce: In a small bowl, whisk together the remaining soy sauce, oyster sauce (if using), sesame oil, and cornstarch. Gradually add the water or chicken broth and mix until smooth.

        Heat the Wok or Skillet: Heat the vegetable oil in a large skillet or wok over medium-high heat until shimmering.

          Cook the Shrimp: Add the marinated shrimp to the skillet and stir-fry for about 2-3 minutes until they turn pink and opaque. Remove the shrimp from the pan and set aside.

            Stir-Fry the Vegetables: In the same pan, add the minced garlic and ginger. Sauté for about 30 seconds until fragrant. Then add the broccoli, bell pepper, carrot, and sugar snap peas. Stir-fry for 4-5 minutes until the vegetables are tender but still crisp.

              Combine Everything: Return the cooked shrimp to the pan. Pour the stir-fry sauce over the shrimp and vegetables. Stir well to coat everything evenly. Cook for an additional 1-2 minutes until the sauce thickens slightly.

                Serve: Remove from heat and divide the stir-fry into bowls over a bed of cooked rice or quinoa. Garnish with sesame seeds and chopped green onions.
