Savory Sausage and Mushroom Hand Pies

Ingredients
  

1 lb (450g) ground sausage (pork or turkey)

1 cup mushrooms, finely chopped (any variety)

1 small onion, diced

2 cloves garlic, minced

1 tsp dried thyme

1 tsp dried oregano

Salt and pepper, to taste

1 cup shredded cheddar cheese

1 package (14 oz) refrigerated pie crusts (or homemade)

1 egg, beaten (for egg wash)

1 tbsp olive oil

Fresh parsley, chopped (for garnish, optional)

Instructions
 

Cook the Sausage Mixture:

    In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until translucent, about 2-3 minutes. Add the ground sausage and cook until browned, breaking it apart as it cooks. Drain excess fat if necessary.

      Add Mushroom and Seasonings:

        Mix in the finely chopped mushrooms, thyme, oregano, salt, and pepper. Cook until the mushrooms are soft and all moisture has evaporated, about 5-7 minutes. Remove from heat and stir in the shredded cheddar cheese. Allow the mixture to cool slightly.

          Prepare the Pie Crusts:

            Preheat your oven to 400°F (200°C). Roll out the pie crusts on a lightly floured surface. Using a round cutter (about 4-5 inches in diameter), cut out circles from the dough. You should have about 12 circles.

              Fill the Hand Pies:

                Place about 2 tablespoons of the sausage mixture in the center of each dough circle. Be careful not to overfill. Fold the dough over to create a semi-circle and press the edges together. Use a fork to crimp the edges and seal the pies.

                  Egg Wash and Bake:

                    Place the hand pies on a baking sheet lined with parchment paper. Brush the tops with the beaten egg to create a golden finish when baked. Cut small slits in the top of each pie to allow steam to escape.

                      Bake:

                        Bake in the preheated oven for 20-25 minutes or until the pies are golden brown.

                          Serve:

                            Remove from the oven and let cool slightly. Garnish with fresh parsley if desired. Serve warm, and enjoy your delicious savory sausage and mushroom hand pies!
