Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/4 cup cold unsalted butter, cubed

1 cup ricotta cheese (drained)

1 large egg

1 tablespoon honey

1/4 cup fresh parsley, chopped

1/4 cup fresh chives, chopped

1/4 cup grated Parmesan cheese

1/4 teaspoon black pepper

Optional: Extra herbs for garnish

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients: In a large bowl, combine the all-purpose flour, baking powder, baking soda, and salt. Whisk them together until well-blended.

Cut in the Butter: Add the cold, cubed butter to the dry ingredients. Using a pastry cutter or your fingertips, work the butter into the flour until the mixture resembles coarse crumbs.

Combine Wet Ingredients: In a separate bowl, whisk together the ricotta cheese, egg, and honey until smooth and combined.

Blend Mixtures: Pour the ricotta mixture into the dry ingredients. Add in the chopped parsley, chives, grated Parmesan, and black pepper. Gently stir until a dough forms. Be careful not to over-mix; a few lumps are fine.

Shape the Dough: Turn the dough out onto a lightly floured surface. Pat it into a rectangle about 1-inch thick. Cut the dough into triangles or use a round biscuit cutter to shape the scones.

Prepare for Baking: Place the shaped scones on the prepared baking sheet, leaving some space between each. Optionally, sprinkle with extra herbs or a bit more Parmesan on top for added flavor.

Bake: Bake in the preheated oven for 15-20 minutes, or until the scones are golden brown on top.

Cool & Serve: Once baked, remove from the oven and let them cool slightly on a wire rack. Serve warm alongside butter or a light salad for a delectable treat.
