Savory Italian Sausage and Kale Galette

1 ½ cups all-purpose flour

½ teaspoon salt

1 tablespoon sugar

1 stick (½ cup) chilled unsalted butter, cut into cubes

5 to 6 tablespoons ice water

1 pound Italian sausage (mild or spicy, based on preference)

2 cups chopped kale (stems removed)

1 small onion, finely chopped

2 cloves garlic, minced

1 cup ricotta cheese

1 cup grated mozzarella cheese

1 teaspoon dried oregano

½ teaspoon crushed red pepper flakes (optional)

Salt and pepper to taste

1 egg, beaten (for egg wash)

Instructions
 

Prepare the Dough: In a mixing bowl, combine the flour, salt, and sugar. Add the chilled butter pieces and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together. Form it into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

    Cook the Sausage: In a large skillet over medium heat, add the Italian sausage. Break it apart with a wooden spoon and cook until browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.

      Sauté the Vegetables: To the same skillet, add the chopped onion and garlic. Sauté until the onion is translucent, about 3-4 minutes. Add the chopped kale, and cook until it wilts, about 2-3 minutes. Stir in the cooked sausage, oregano, red pepper flakes (if using), and season with salt and pepper. Remove from heat and let it cool slightly.

        Mix the Cheese Filling: In a separate bowl, combine the ricotta and mozzarella cheese. Mix well and season with salt and pepper to taste.

          Assemble the Galette: Preheat your oven to 400°F (200°C). On a lightly floured surface, roll out the chilled dough into a large, roughly 12-inch circle. Transfer it to a lined baking sheet. Spread the ricotta and mozzarella mixture in the center of the dough, leaving about a 2-inch border. Top with the sausage and kale mixture.

              Bake the Galette: Place the galette in the preheated oven and bake for 25-30 minutes or until the crust is golden brown and crispy.
