1 pound boneless, skinless chicken breast, thinly sliced

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil, divided

1 medium red bell pepper, sliced

1 medium yellow bell pepper, sliced

1 cup snap peas, trimmed

1 cup broccoli florets

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 teaspoon sesame oil

1 teaspoon honey

Juice of 1 lemon

Salt and pepper to taste

2 green onions, sliced (for garnish)

Cooked jasmine or brown rice (for serving)

Instructions
 

Marinate the Chicken: In a bowl, combine the sliced chicken breast, soy sauce, oyster sauce, and cornstarch. Mix well and let the chicken marinate for at least 15 minutes to absorb the flavors.

    Prepare the Sauce: In a small bowl, whisk together the sesame oil, honey, lemon juice, and a pinch of salt and pepper. Set aside.

      Heat the Oil: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.

        Cook the Chicken: Add the marinated chicken to the skillet, spreading it out in a single layer. Cook for about 5-6 minutes, stirring occasionally, until the chicken is golden brown and cooked through. Remove the chicken from the skillet and place it on a plate.

          Stir-Fry the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Sauté the garlic and grated ginger for about 30 seconds until fragrant. Then, add the red and yellow bell peppers, snap peas, and broccoli. Stir-fry the vegetables for about 4-5 minutes, or until they are tender-crisp.

            Combine Everything: Return the cooked chicken to the skillet with the vegetables. Pour the prepared sauce over the mixture and toss everything together to coat. Cook for an additional 2 minutes until heated through.

              Finish and Serve: Taste and adjust seasoning with additional salt and pepper if necessary. Garnish with sliced green onions before serving. Serve hot over jasmine or brown rice for a complete meal!
