Savory Chicken and Vegetable Fried Rice

2 cups cooked jasmine rice (preferably day-old)

1 lb chicken breast, diced

1 cup mixed vegetables (carrots, peas, corn)

1 small onion, finely chopped

2 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional for extra flavor)

2 large eggs, beaten

3 green onions, chopped

2 tablespoons vegetable oil

Salt and black pepper to taste

A pinch of sesame oil (for drizzling)

Prepare the Ingredients: If using day-old rice, break up any clumps with your hands. Dice the chicken breast and chop the onion, garlic, and green onions.

    Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the diced chicken and cook until fully cooked and slightly golden, about 5-7 minutes. Season with salt and pepper. Remove the chicken from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add another tablespoon of vegetable oil. Sauté the chopped onion and garlic until fragrant and translucent, about 2-3 minutes. Then, add the mixed vegetables and continue to cook for an additional 3-4 minutes until they are tender.

        Create a Well for the Eggs: Push the vegetable mixture to one side of the skillet. Pour the beaten eggs into the empty side and scramble until fully cooked, about 2 minutes.

          Combine Everything: Add the cooked chicken back to the skillet, then mix in the cooked rice. Pour the soy sauce and oyster sauce over the mixture and stir well to combine. Cook for an additional 3-4 minutes, allowing the rice to slightly crisp up on the bottom.

            Finish & Garnish: Stir in the chopped green onions and a drizzle of sesame oil for extra flavor. Adjust seasoning with more salt or soy sauce if needed.
