1 medium butternut squash (about 2 pounds), peeled, seeded, and diced

1 tablespoon olive oil

1 teaspoon dried thyme

1 teaspoon ground nutmeg

2 cloves garlic, minced

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

2 large eggs

1 tablespoon fresh parsley, chopped (for garnish)

1 pre-made pie crust (or homemade if you prefer)

Preheat the Oven: Start by preheating your oven to 400°F (200°C).

    Roasting the Squash: In a large bowl, toss the diced butternut squash with olive oil, salt, pepper, thyme, nutmeg, and minced garlic. Spread the seasoned squash on a baking sheet in an even layer. Roast in the preheated oven for 25-30 minutes or until tender and slightly caramelized, stirring halfway through.

      Prepare the Pie Crust: While the squash is roasting, place the pie crust in a tart pan (or pie dish) and press it into the bottom and sides. Trim any excess dough hanging over the edges. Pre-bake the crust for 10 minutes until lightly golden.

        Blend the Filling: In a mixing bowl, combine the ricotta cheese, Parmesan cheese, and eggs. Add a pinch of salt and pepper. Mix until smooth and well combined.

          Combine Ingredients: Once the butternut squash is roasted and cooled slightly, add it to the cheese mixture. Gently fold together until the squash is evenly distributed throughout the filling.
