1 can (15 oz) black beans, drained and rinsed

1 tablespoon olive oil

Juice of 1 lime

For the Rice:

1 cup brown rice (or white rice)

2 cups vegetable broth (or water)

1 tablespoon olive oil

1 teaspoon garlic powder

Salt to taste

1 avocado, diced

1 cup cherry tomatoes, halved

1 cup corn (canned, frozen, or fresh)

1/2 cup fresh cilantro, chopped

1 cup shredded cheese (cheddar or Mexican blend)

Instructions
 

Cook the Rice:

    - In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the brown rice, stirring it for about 2 minutes until lightly toasted.
