1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

1 cup bell peppers, diced (any color)

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon chili powder

Salt and black pepper, to taste

2 cups shredded cheese (cheddar, Monterey Jack, or a mix)

8 large flour tortillas

2 tablespoons olive oil (for frying)

Fresh cilantro, chopped (for garnish)

Sour cream and salsa (for serving)

Instructions
 

Cook the Beef Filling:

    - In a large skillet over medium heat, add the ground beef. Brown the beef, breaking it apart with a spoon until fully cooked, about 5-7 minutes.

      - Add the diced onion and minced garlic to the skillet. Sauté until the onion is translucent, about 3-4 minutes.

        - Stir in the diced bell peppers, cumin, smoked paprika, chili powder, salt, and black pepper. Cook until the peppers are softened, about 5 minutes. Remove from heat and set aside.

          Assemble the Quesadillas:

            - Lay a tortilla flat on a clean surface. Sprinkle a generous amount of shredded cheese over one half of the tortilla.

              - Spoon a portion of the beef filling over the cheese. Sprinkle more cheese on top of the beef for optimal melting.

                - Fold the tortilla in half to cover the filling.

                  Cook the Quesadillas:

                    - In the same skillet (you can wipe it clean or use another), heat 1 tablespoon of olive oil over medium heat.

                      - Place the folded quesadilla in the skillet and cook until the tortilla is golden brown and crispy, about 3-4 minutes on each side. Repeat with the remaining tortillas, adding more oil as necessary.

                        Serve:

                          - Once cooked, remove the quesadillas from the skillet and let them cool slightly before cutting them into wedges.
