Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup unsalted butter, cold and cubed

1 cup shredded sharp cheddar cheese

1 cup cooked bacon, crumbled

3/4 cup buttermilk

1 tablespoon chopped fresh chives (optional, for garnish)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Combine Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and black pepper until well combined.

Cut in the Butter: Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.

Add Cheese and Bacon: Gently fold in the shredded cheddar cheese and crumbled bacon until evenly distributed throughout the mixture.

Mix Wet Ingredients: Create a well in the center of the mixture and pour in the buttermilk. Stir until just combined; be careful not to overmix.

Shape the Biscuits: Turn the dough onto a lightly floured surface. Gently knead it a couple of times just until it comes together. Pat or roll the dough into a 1-inch thick rectangle. Use a biscuit cutter or a sharp knife to cut out biscuits—about 2-3 inches in diameter.

Bake: Transfer the biscuits to the prepared baking sheet, placing them close together. Bake in the preheated oven for 15-18 minutes, or until the tops are golden brown.

Cool and Serve: Once done, remove the biscuits from the oven and let them cool for a few minutes on the baking sheet. Garnish with chopped fresh chives, if desired. Serve warm, preferably with a smear of butter.
