Sausage and Sweet Potato Hash with Eggs

2 medium sweet potatoes, peeled and diced

1 pound Italian sausage (mild or spicy, your choice)

1 red bell pepper, diced

1 onion, finely chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

¼ teaspoon cayenne pepper (optional, for heat)

Salt and pepper to taste

4 large eggs

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Cook the Sausage: In a large skillet over medium heat, add the Italian sausage. Break it up with a spatula and cook until browned and fully cooked, about 5-7 minutes. Use a slotted spoon to remove the sausage from the skillet and set aside, leaving the drippings in the pan.

    Sauté Vegetables: In the same skillet, add 2 tablespoons of olive oil. Once heated, add the diced sweet potatoes. Cook for about 10 minutes, stirring occasionally, until they start to soften.

      Add Aromatics: Stir in the onion and red bell pepper. Cook for another 5-7 minutes until the onions become translucent and the peppers are tender. Add minced garlic, smoked paprika, and cayenne pepper (if using). Season with salt and pepper, then stir well to combine.
