Sausage and Pepper Stuffed Bell Peppers

4 large bell peppers (any color)

1 pound Italian sausage (mild or spicy, based on preference)

1 cup cooked rice (white or brown)

1 medium onion, diced

2 cloves garlic, minced

1 cup diced tomatoes (fresh or canned)

1 teaspoon Italian seasoning

1/2 teaspoon smoked paprika

1 cup shredded mozzarella cheese

Olive oil (for sautéing)

Salt and black pepper to taste

Fresh parsley or basil for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare Peppers: Cut the tops off the bell peppers and remove the seeds and ribs. Lightly drizzle the insides with olive oil and season with a pinch of salt. Place them upright in a baking dish.

      Cook Sausage: In a large skillet over medium heat, add a splash of olive oil. Add the Italian sausage, breaking it up with a wooden spoon. Cook until browned and fully cooked, about 6-8 minutes.

        Sauté Vegetables: Add the diced onion and garlic to the skillet with the sausage. Sauté for another 3-4 minutes until the onion is translucent.

          Mix Filling: Stir in the cooked rice, diced tomatoes, Italian seasoning, smoked paprika, and half of the mozzarella cheese. Season with salt and pepper to taste. Remove from heat and mix until combined.

            Stuff Peppers: Carefully spoon the sausage and rice mixture into each bell pepper, filling them generously.

              Top with Cheese: Sprinkle the remaining mozzarella cheese on top of each stuffed pepper.

                Bake: Cover the baking dish with aluminum foil and bake for 25 minutes. Then remove the foil and bake for an additional 10-15 minutes until the peppers are tender and the cheese is melted and bubbly.

                  Serve: Once done, remove from the oven and let cool for a few minutes. Garnish with fresh parsley or basil if desired, then serve warm.
