Salmon Lettuce Wraps with Lemon Glaze

Ingredients
  

1 lb fresh salmon fillets, skin on

1 tbsp olive oil

Salt and pepper to taste

1/4 cup honey

1/4 cup fresh lemon juice (about 2 lemons)

Zest of 1 lemon

1 tbsp soy sauce

1 tsp minced garlic

1 tsp minced ginger

1 tbsp fresh dill, chopped (optional)

1 head of butter or romaine lettuce, leaves separated

1 avocado, sliced

1/2 cup shredded carrots

1/2 cup cucumber, thinly sliced

Sesame seeds for garnish

Instructions
 

Prepare the Salmon: Preheat your oven to 400°F (200°C). Place the salmon fillets on a lined baking sheet, skin side down. Drizzle with olive oil and season with salt and pepper.

    Make the Lemon Glaze: In a small saucepan over medium heat, combine the honey, fresh lemon juice, lemon zest, soy sauce, minced garlic, and minced ginger. Bring to a simmer, stirring frequently, and let it cook for about 5-7 minutes or until slightly thickened. Remove from heat and set aside.

      Bake the Salmon: Pour half of the lemon glaze over the salmon fillets. Reserve the other half for serving. Bake the salmon in the preheated oven for 12-15 minutes or until it flakes easily with a fork.

        Assemble the Wraps: Once the salmon is cooked, remove it from the oven and let it cool slightly. Using a fork, flake the salmon into bite-sized pieces.

          Prepare the Lettuce Wraps: Take a lettuce leaf and add a few pieces of flaked salmon in the center. Top with avocado slices, shredded carrots, and cucumber slices. If desired, sprinkle fresh dill on top.

            Drizzle and Garnish: Drizzle the reserved lemon glaze over the filled lettuce wraps and sprinkle with sesame seeds for an extra crunch.
