4 ripe peaches, halved and pitted

2 tablespoons olive oil

2 teaspoons fresh thyme leaves (plus extra for garnish)

1 tablespoon balsamic vinegar

2 tablespoons honey or maple syrup

Pinch of salt

Crumbled goat cheese or feta (optional for serving)
