4 ears of fresh corn, husked

2 ripe avocados, diced

1 medium red onion, finely chopped

1 jalapeño, seeded and minced (adjust for spice preference)

1 cup cherry tomatoes, halved

1/2 cup fresh cilantro, chopped

Juice of 2 limes

2 tablespoons olive oil

1 teaspoon smoked paprika

Salt and pepper to taste

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Corn:

      - Place the husked corn on a baking sheet.

        - Drizzle with 1 tablespoon of olive oil and sprinkle with salt and pepper.

          - Roast in the preheated oven for about 25-30 minutes, turning occasionally until golden and slightly charred.

            - Once roasted, let the corn cool slightly before cutting the kernels off the cobs.

              Prepare the Salsa:

                - In a large mixing bowl, combine the roasted corn kernels, diced avocados, chopped red onion, minced jalapeño, halved cherry tomatoes, and chopped cilantro.

                  - In a small bowl, whisk together lime juice, remaining olive oil, smoked paprika, and a pinch of salt and pepper.

                    Combine:

                      - Pour the dressing over the salsa ingredients and gently mix until well combined. Be careful not to mash the avocados too much.

                        Taste and Adjust:

                          - Taste the salsa and adjust the seasoning as desired, adding more lime juice, salt, or smoked paprika to enhance the flavors.

                            Chill:
