Roasted Corn and Jalapeño Dip

4 ears of fresh corn, husked

2 medium jalapeños, seeds removed and finely chopped

1 cup cream cheese, softened

1 cup sour cream

1 cup shredded cheddar cheese

½ cup mayonnaise

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper, to taste

2 tablespoons fresh cilantro, chopped (for garnish)

Tortilla chips (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Corn: Place the husked ears of corn on a baking sheet. Roast in the preheated oven for about 25-30 minutes, or until the kernels are tender and beginning to char slightly. Allow to cool, then cut the kernels off the cob and set aside.

      Prepare Jalapeños: While the corn roasts, in a small skillet over medium heat, sauté the chopped jalapeños for about 5 minutes until they soften. Remove from heat and let them cool.

        Mix the Base: In a large mixing bowl, combine the softened cream cheese, sour cream, mayonnaise, garlic powder, onion powder, smoked paprika, and salt and pepper. Use a handheld mixer or a whisk to blend until smooth and creamy.

          Combine Ingredients: Fold in the roasted corn, sautéed jalapeños, and shredded cheddar cheese until evenly mixed.

            Transfer to Baking Dish: Spread the mixture into a 9-inch baking dish or a similar oven-safe dish.

              Bake the Dip: Place the baking dish in the oven and bake for 20-25 minutes, or until the dip is bubbling and the top is slightly golden.

                Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with freshly chopped cilantro before serving.
