1 medium head of cauliflower, cut into small florets

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon chili powder

Salt and pepper to taste

8 small corn or flour tortillas

1 cup shredded red cabbage

1/2 cup fresh cilantro, chopped

1 lime, cut into wedges

Avocado Crema:

1 ripe avocado

1/2 cup Greek yogurt or sour cream

Juice of 1 lime

Salt to taste

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Season the Cauliflower: In a large bowl, combine the cauliflower florets with olive oil, smoked paprika, cumin, chili powder, salt, and pepper. Toss until all the florets are well-coated.

      Roast the Cauliflower: Spread the seasoned cauliflower on a baking sheet in a single layer. Roast for 25-30 minutes, or until tender and slightly charred, tossing halfway through for even cooking.

        Prepare the Avocado Crema: While the cauliflower is roasting, make the avocado crema. In a blender or food processor, combine avocado, Greek yogurt (or sour cream), lime juice, and a pinch of salt. Blend until smooth and creamy. Adjust salt and lime juice to taste.

          Warm the Tortillas: When the cauliflower is nearly done, warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until pliable.
