Ingredients

2 cups fresh broccoli florets

1 can (15 oz) white beans (such as cannellini or navy), rinsed and drained

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

1 tablespoon lemon juice

1/4 cup grated Parmesan cheese (optional for topping)

Fresh parsley, chopped (for garnish)

cooked quinoa or brown rice (for serving)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C).

Prepare the Broccoli: In a large bowl, combine the broccoli florets with 1 tablespoon of olive oil, minced garlic, smoked paprika, red pepper flakes, salt, and pepper. Toss until the broccoli is evenly coated.

Roast the Broccoli: Spread the seasoned broccoli on a large baking sheet in a single layer. Place it in the oven and roast for 15-20 minutes, or until the edges are crispy and the florets are tender.

Prepare the White Beans: While the broccoli is roasting, heat the remaining tablespoon of olive oil in a small skillet over medium heat. Add the rinsed white beans and sauté for about 5-7 minutes until they're heated through. Season with salt, pepper, and a splash of lemon juice.

Combine Ingredients: Once the broccoli is roasted and the beans are heated, gently mix the roasted broccoli with the sautéed white beans in a large bowl. Drizzle with additional lemon juice for brightness.

Serve: Divide your cooked quinoa or brown rice among serving bowls. Spoon the roasted broccoli and white bean mixture over the grains. If desired, sprinkle with grated Parmesan cheese and garnish with chopped parsley.

Enjoy: Serve warm and enjoy your nutritious and flavorful Roasted Broccoli and White Bean Bowl!
