Ingredients

For the dough:

2 cups all-purpose flour

1 packet (2 ¼ tsp) active dry yeast

¾ cup warm water (110°F)

1 tbsp olive oil

1 tsp sugar

1 tsp salt

For the sauce:

1 cup tomato sauce

1 tsp dried oregano

1 tsp garlic powder

Salt and pepper to taste

Toppings:

½ cup shredded mozzarella cheese

½ cup shredded cheddar cheese

½ red bell pepper, thinly sliced

½ yellow bell pepper, thinly sliced

½ zucchini, thinly sliced

½ cup cherry tomatoes, halved

½ cup red onion, thinly sliced

1 avocado, sliced

Fresh basil leaves, for garnish

Instructions

Prepare the dough:

    - In a small bowl, activate the yeast by mixing it with warm water and sugar. Let it sit for 5-10 minutes until frothy.

      - In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil.

        - Mix until a dough forms. Knead on a lightly floured surface for about 5-7 minutes until smooth and elastic.

          - Place the dough in a greased bowl, cover it with a cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

            Prepare the sauce:

              - While the dough is rising, mix the tomato sauce, oregano, garlic powder, salt, and pepper in a small bowl. Set aside.

                Preheat the oven:

                  - Preheat your oven to 475°F (245°C) with a pizza stone (if you have one) or a baking sheet.

                    Shape the pizza:

                      - Once the dough has risen, punch it down and roll it out on a floured surface into your desired shape, roughly 12 inches in diameter.

                        - Transfer the dough to a floured pizza peel or a piece of parchment paper if you’re using a baking sheet.

                          Add sauce and cheese:

                            - Spread the prepared sauce evenly over the dough, leaving a small border for the crust.

                              - Sprinkle the shredded mozzarella and cheddar cheese over the sauce.

                                Add the rainbow veggies:

                                  - Arrange the sliced red and yellow bell peppers, zucchini, red onion, and cherry tomatoes artistically across the pizza, creating a colorful rainbow effect.

                                    Bake the pizza:

                                      - Carefully slide the pizza onto the preheated pizza stone or baking sheet.

                                        - Bake for 12-15 minutes or until the crust is golden and the cheese is bubbling.

                                          Finish with avocado and basil:

                                            - Remove the pizza from the oven and let it cool for a minute before topping with fresh avocado slices and basil leaves for a finishing touch.

                                              Slice and serve:

                                                - Slice the pizza into wedges and serve hot, enjoying the vibrant flavors and textures of each vegetable.
