8 oz (about 2 cups) tri-color fusilli pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup bell peppers (assorted colors), diced

1 cup corn kernels (fresh or frozen)

1 cup black olives, sliced

1/2 cup red onion, finely chopped

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup extra-virgin olive oil

3 tablespoons red wine vinegar

1 teaspoon Dijon mustard

1 teaspoon garlic powder

Salt and pepper to taste

Cook the Pasta: In a large pot of boiling salted water, add the tri-color fusilli pasta. Cook according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

    Prepare the Veggies: While the pasta is cooking, chop the cherry tomatoes, cucumber, bell peppers, and red onion. If using frozen corn, defrost it in a strainer under warm water.

      Make the Dressing: In a small bowl, whisk together the extra-virgin olive oil, red wine vinegar, Dijon mustard, garlic powder, salt, and pepper until well combined.

        Combine Ingredients: In a large mixing bowl, add the cooled pasta, cherry tomatoes, cucumber, bell peppers, corn, black olives, red onion, feta cheese, and parsley.
