Quick Turkey Meatball and Zucchini Noodle Soup

For the Meatballs:

1 lb ground turkey

1/4 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 tsp Italian seasoning

Salt and pepper to taste

For the Soup:

4 cups low-sodium chicken broth

2 medium zucchinis, spiralized into noodles

1 cup diced tomatoes (canned or fresh)

1 cup baby spinach

1 small onion, diced

2 cloves garlic, minced

1 tsp olive oil

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

Fresh basil or parsley for garnish (optional)

Instructions
 

Make the Meatballs: In a mixing bowl, combine the ground turkey, breadcrumbs, Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper. Mix until just combined. Scoop out a tablespoon of the mixture and roll it into a ball. Repeat until all mixture is used. You should yield about 20 meatballs.

    Brown the Meatballs: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the meatballs in batches (don’t overcrowd) and sear until they are browned on all sides, about 5 minutes. Remove them from the pot and set aside.

      Sauté the Aromatics: In the same pot, add the diced onion and sauté for about 2-3 minutes until translucent. Add the minced garlic and red pepper flakes (if using), and cook for another minute until fragrant.

        Simmer the Soup: Add the chicken broth and diced tomatoes to the pot. Bring to a simmer and then return the meatballs to the pot. Cover and let simmer for about 10-15 minutes, allowing the meatballs to cook through.

          Add Zucchini Noodles and Spinach: Just before serving, stir in the spiralized zucchini noodles and the baby spinach. Continue to cook for another 2-3 minutes, or until the zucchini is tender but still slightly crisp.

            Taste and Adjust Seasoning: Before serving, taste the soup and adjust the seasoning with salt and pepper as necessary.

              Serve: Ladle the soup into bowls, garnishing with fresh basil or parsley, if desired. Enjoy your warm and comforting soup!
