Quick Teriyaki Salmon and Green Bean Bowl

Ingredients
  

2 salmon fillets (about 6 oz each)

2 tablespoons teriyaki sauce (store-bought or homemade)

1 tablespoon olive oil

1 cup fresh green beans, trimmed

1 cup cooked rice (white or brown)

1 teaspoon sesame oil

1 teaspoon garlic, minced

1 teaspoon ginger, minced

1 tablespoon sesame seeds

2 green onions, sliced (for garnish)

Salt and pepper to taste

Instructions
 

Marinate the Salmon: In a small bowl, mix the teriyaki sauce with olive oil, garlic, and ginger. Place the salmon fillets in a shallow dish and pour half of the marinade over them. Let it marinate for at least 10 minutes while you prepare the rest of the ingredients.

    Cook the Green Beans: In a large skillet over medium heat, add a splash of water and the trimmed green beans. Cover and steam for about 3-4 minutes, until they are bright green and tender-crisp. Remove the lid, and season with salt, pepper, and sesame oil. Sauté for another 2 minutes until fully cooked. Remove from the skillet and set aside.

      Cook the Salmon: In the same skillet, heat a bit more olive oil over medium heat. Add the marinated salmon skin-side down. Cook for about 4-5 minutes, then flip and cook for an additional 3-4 minutes or until the salmon is cooked through and flakes easily with a fork. Brush the remaining marinade over the salmon during the last minute of cooking for added flavor.

        Assemble the Bowl: In serving bowls, spoon the cooked rice as the base. Place the sautéed green beans on one side and the teriyaki salmon on the other. Sprinkle sesame seeds and sliced green onions over the top.

          Serve & Enjoy: Drizzle any remaining teriyaki sauce on top, if desired, and serve immediately!
