Quick Teriyaki Chicken Stir-Fry with Veggies

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

2 tablespoons vegetable oil

2 cups mixed vegetables (e.g., bell peppers, broccoli, snow peas, and carrots)

4 cloves garlic, minced

1-inch piece fresh ginger, grated

1/2 cup teriyaki sauce (store-bought or homemade)

1 tablespoon sesame oil

2 green onions, sliced (for garnish)

1 tablespoon sesame seeds (for garnish)

Steamed rice or quinoa, for serving

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken pieces with 2 tablespoons of teriyaki sauce. Let it marinate for about 15 minutes while you prepare the veggies.

    Prep the Veggies: Chop the mixed vegetables into bite-sized pieces. Set them aside.

      Sauté Chicken: In a large skillet or wok, heat vegetable oil over medium-high heat. Once hot, add the marinated chicken pieces. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.

        Add Aromatics: Add the minced garlic and grated ginger to the pan. Stir for about 30 seconds until fragrant.

          Stir-Fry Veggies: Add the mixed vegetables to the skillet. Stir-fry everything together for about 3-4 minutes or until the veggies are tender-crisp.
