Ingredients

1 cup long-grain white rice

2 cups vegetable broth

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 medium red bell pepper, diced

1 small red onion, diced

1 teaspoon ground cumin

1 teaspoon chili powder

1 teaspoon garlic powder

1 teaspoon onion powder

1 tablespoon olive oil

1 avocado, sliced

1 cup cherry tomatoes, halved

1/2 cup shredded cheese (cheddar or a Mexican blend)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Salt and pepper, to taste

Instructions

Cook the Rice: In a medium saucepan, bring the vegetable broth to a boil. Add the rice, reduce heat to low, cover, and simmer for about 15-18 minutes until the rice is tender. Fluff with a fork and set aside.

Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced red onion and red bell pepper, cooking until softened, about 3-4 minutes.

Add Beans and Spices: Stir in the rinsed black beans, corn, ground cumin, chili powder, garlic powder, and onion powder. Season with salt and pepper. Cook for an additional 5 minutes until everything is heated through.

Assemble the Bowl: In a serving bowl, create a base of the cooked rice. Top it with the black bean and corn mixture.

Add Toppings: Layer on the sliced avocado, halved cherry tomatoes, and shredded cheese.

Garnish and Serve: Sprinkle fresh cilantro over the top and serve with lime wedges on the side for extra flavor. Enjoy your Quick Taco Bowl!
