2 cups fresh mushrooms (cremini or button), sliced

1 cup smoked cheese (like smoked gouda or cheddar), grated

1 cup cream cheese, softened

1/2 cup sour cream

1 cup spinach (fresh or thawed frozen), chopped

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon black pepper

Salt to taste

1 cup breadcrumbs (panko preferred for extra crunch)

1/4 cup Parmesan cheese, grated

Fresh parsley, chopped for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease a baking dish (around 8x8 inches) with cooking spray or olive oil.

    Sauté the Vegetables: In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then, add the sliced mushrooms. Cook for about 5-7 minutes or until the mushrooms are tender and have released their moisture. Stir in the chopped spinach and cook for an additional 2 minutes until wilted.

      Prepare the Cheese Mixture: In a large mixing bowl, combine the softened cream cheese, sour cream, smoked cheese, smoked paprika, black pepper, and salt. Mix well until smooth and creamy.

        Combine Ingredients: Fold the sautéed mushroom and spinach mixture into the cheese mixture until everything is well incorporated.

          Transfer to Baking Dish: Pour the mixture into the prepared baking dish, spreading it evenly.
