Quick Grilled Shrimp & Pineapple Tacos

Ingredients
  

1 pound large shrimp, peeled and deveined

1 cup fresh pineapple, cut into small chunks

2 tablespoons olive oil

2 teaspoons chili powder

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper, to taste

8 small corn tortillas

1 cup red cabbage, shredded

½ cup fresh cilantro, chopped

1 avocado, sliced

Lime wedges, for serving

Optional: hot sauce, for extra kick

Instructions
 

Marinate the Shrimp: In a medium bowl, combine olive oil, chili powder, garlic powder, cumin, salt, and pepper. Add the shrimp and pineapple chunks, tossing to coat evenly. Allow to marinate for 15 minutes.

    Prepare the Grill: Preheat your grill or grill pan over medium-high heat. If using a grill pan, lightly oil the surface to prevent sticking.

      Grill the Shrimp and Pineapple: Thread the marinated shrimp and pineapple onto skewers (if using wooden skewers, soak in water for 30 minutes beforehand). Grill for about 2-3 minutes on each side, or until the shrimp are pink and opaque, and the pineapple has nice grill marks.

        Warm the Tortillas: While the shrimp and pineapple are grilling, place the corn tortillas on the grill for about 30 seconds on each side or until warmed and slightly charred.

          Assemble the Tacos: Remove the shrimp and pineapple from the skewers. Place a generous amount of the grilled shrimp and pineapple mixture onto each tortilla. Top with shredded red cabbage, fresh cilantro, and slices of avocado.
