Ingredients

2 large ripe peaches, pitted and sliced

4 store-bought flatbreads or naan

1 cup goat cheese, crumbled

1/4 cup honey

1/4 cup balsamic glaze

2 tablespoons fresh basil, chopped (plus extra for garnish)

1 tablespoon olive oil

Pinch of salt and black pepper

Instructions

Preheat the Grill: Heat your grill to medium-high heat (about 400°F/200°C). If using a grill pan, place it over medium heat on the stove.

Prepare the Peaches: In a bowl, toss the peach slices with olive oil, a pinch of salt, and black pepper.

Grill the Peaches: Place the peach slices on the grill. Grill for about 2-3 minutes on each side, until they have nice grill marks and are slightly softened. Remove and set aside.

Assemble the Flatbreads: Place the flatbreads on the grill (or grill pan) for about 1 minute to warm slightly. Flip them and spread a generous layer of crumbled goat cheese over each flatbread.

Add the Peaches: Arrange the grilled peach slices on top of the goat cheese. Drizzle honey over the peaches for a touch of sweetness.

Finish on the Grill: Close the grill lid and cook for another 2-3 minutes, just until the cheese starts to soften and the flatbreads have grill marks.

Garnish and Serve: Remove flatbreads from the grill. Drizzle with balsamic glaze and sprinkle with chopped fresh basil. Cut into slices and serve immediately.
