1 lb (450g) beef sirloin, thinly sliced

2 tablespoons vegetable oil

1 medium red bell pepper, sliced

1 cup broccoli florets

1 medium carrot, julienned

1 cup snap peas

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

3 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon sesame oil

1 teaspoon cornstarch mixed with 2 tablespoons water (optional for thickening)

2 green onions, sliced

Cooked rice or quinoa, for serving

Prepare the Beef: In a bowl, toss the thinly sliced beef with 1 tablespoon of soy sauce. Let it marinate while you prep the veggies.

    Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

      Cook the Beef: Add the marinated beef to the hot skillet. Stir-fry for 3-4 minutes until browned and just cooked through. Remove from the skillet and set aside.

        Stir-Fry the Veggies: In the same skillet, add the minced garlic and ginger. Sauté for about 30 seconds, then add the bell pepper, broccoli, carrot, and snap peas. Stir-fry for 4-5 minutes until the vegetables are tender-crisp.

          Combine Flavors: Return the cooked beef to the skillet. Add the remaining soy sauce, oyster sauce, and sesame oil. If you'd like a thicker sauce, mix the cornstarch with water and add it now. Stir everything together for another 2 minutes until heated through.

            Finish and Serve: Remove from heat, sprinkle with sliced green onions, and give everything one last mix. Serve the stir-fry over a bed of cooked rice or quinoa for a satisfying meal.
