Quick Beef and Broccoli Stir-Fry

1 pound (450g) flank steak, thinly sliced against the grain

2 cups fresh broccoli florets

1 bell pepper, sliced (red or yellow for color)

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/4 cup soy sauce (low sodium if preferred)

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil (divided)

1 teaspoon sesame oil

1/2 teaspoon crushed red pepper flakes (optional)

2 green onions, sliced for garnish

Cooked rice or noodles, for serving

Instructions
 

Marinate the Beef: In a bowl, combine the sliced flank steak with 2 tablespoons of soy sauce, 1 tablespoon of cornstarch, and 1 tablespoon of vegetable oil. Toss to coat evenly and let marinate for at least 15 minutes while preparing other ingredients.

    Prepare the Sauce: In a small bowl, whisk together the remaining soy sauce, oyster sauce, sesame oil, and, if desired, crushed red pepper flakes. Set aside.

      Blanch the Broccoli: Bring a pot of water to a boil. Add the broccoli florets and cook for 1-2 minutes until bright green but still crisp. Drain and immediately plunge the broccoli into an ice bath to stop the cooking. Drain again and set aside.

        Stir-Fry the Beef: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Once hot, add the marinated beef in a single layer. Cook for about 2-3 minutes without stirring, until browned. Stir and cook for an additional minute until just cooked through. Remove the beef from the skillet and set aside.

          Sauté Aromatics and Vegetables: In the same skillet, add another tablespoon of vegetable oil. Add minced garlic and grated ginger, stirring for about 30 seconds until fragrant. Then add sliced bell peppers and blanched broccoli. Stir-fry for 2-3 minutes until the vegetables are vibrant and tender-crisp.

            Combine and Finish: Return the cooked beef to the skillet. Pour the prepared sauce over the beef and vegetables, stirring well to coat everything with the sauce. Cook for another 2 minutes until the sauce has thickened slightly.

              Serve: Remove from heat, garnish with sliced green onions, and serve immediately over cooked rice or noodles.
