Ingredients

1 lb ground beef

1 can (15 oz) black beans, drained and rinsed

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp chili powder

1 tsp cumin

1/2 tsp smoked paprika

1/4 tsp cayenne pepper (adjust to taste)

Salt and black pepper to taste

8 small corn tortillas

1 cup shredded lettuce

1 cup diced tomatoes

1/2 cup shredded cheese (cheddar or Mexican blend)

1/4 cup sour cream or Greek yogurt

Fresh cilantro for garnish

Lime wedges for serving

Instructions

Cook the Beef: In a large skillet over medium heat, add the ground beef. Season with salt and black pepper, and cook until browned, breaking it apart with a wooden spoon—about 5-7 minutes. Drain excess grease if necessary.

Sauté Aromatics: Add the chopped onion and minced garlic to the skillet with the beef. Cook until the onion is translucent—about 3-4 minutes.

Add Spices and Beans: Stir in the chili powder, cumin, smoked paprika, and cayenne pepper. Mix well for about 1 minute until the spices are fragrant. Add in the black beans and stir to combine. Cook for an additional 3-4 minutes until everything is heated through.

Warm the Tortillas: While the beef and bean mixture is cooking, warm the corn tortillas. You can do this in a dry skillet over medium heat for about 30 seconds on each side, or wrap them in a damp paper towel and microwave for about 30 seconds.

Assemble Tacos: Take a warm tortilla and spoon a generous amount of the beef and black bean mixture into the center. Top with shredded lettuce, diced tomatoes, and cheese.

Garnish and Serve: Add a dollop of sour cream or Greek yogurt on top and sprinkle with fresh cilantro. Serve immediately with lime wedges on the side for squeezing over the tacos.
